Eggless coffee cake

 

Ingredients                                                                                                                         

  • 75g of hot milk
  • 2 tsp. instant espresso
  • 240g bread flour
  • (1 1/2 tea spoon) baking powder
  • 150g of sugar
  • (1/4 tea spoon )salt
  • 112g of vegetable oil
  •  plain yogurt(122g)

Coffee - cream cheese frosting

  • 2 1/2 tsp. instant espresso
  • 1 tbsp. hot water
  • 150 g of sweetened condensed milk
  • 113g cream cheese
  • 250g of unsalted butter
  • coffee syrup ( 2tsp. sugar + 1 tbsp. hot water + 2 tsp. coffee)     tsp. means tea spoon
  • 1/2 cup roasted crushed walnuts or cashew nuts
  • grated chocolate

Instructions

1. First instant espresso need to dissolve in hot milk. keep aside.

2. Then you need to sift the flour with baking soda and salt. keep aside. During this time you need to keep your oven preheat at 180 Celsius/ 355 Fahrenheit.

3. Take a deep bowl add sugar, vegetable oil and yogurt and mix them until combined well.

4. Then add the sifted ingredients according to in 3 batches.

5. You need to mix them until they combined well but do not over mix. (Batter)

6. Then transfer the batter into 6 inches greased and parchment paper added pan. Another thing you need to tap the pan until air bubbles releases.

7. Now bake the cake in preheated oven for approximately 30 -35 minutes or you can insert an skewer and check the cake is baked or not.

8. Baked cake take out and keep about 15 minutes for cool.

9. Then slice the baked cake into 4 sheets. It requires about 1 cm height for each slice of sheet.

Coffee + cream cheese frosting

1. Take a bowl add butter and keep until it melts and softened. Once it melted mix until become creamy.

2. Take another bowl and add cream cheese and mix until it become creamy. Once it became creamy add sweetened condensed milk until they combined well each other. (cream cheese mixture)

3. Then add cream cheese mixture into creamy butter bowl and mix until they combined well. (cream cheese butter mixture)

4. In addition prepare a instant espresso for a hot water.( coffee mixture)

5. Mix the coffee mixture with cream cheese butter mixture.

6. Now your coffee cream cheese frosting is ready.

Decorating the cake with Coffee + cream cheese frosting

1. Spread the coffee syrup each layer of the cake.

2. Spread the coffee + cream cheese frosting on each layer and stick them together.

3. After sticking of all the slices spread the coffee + cream cheese frosting around the cake.

4. Cover the sides of the cake from roasted walnuts or cashew chips.

5. Additionally you can take icing machine and make icing flowers top of the cake from coffee + cream cheese frosting and grate some chocolate top of the cake.



NOW your eggless coffee cake is ready.
