Why this type of recipe is better for your health?

Jackfruit can be used as vegetable that may reduce the risk for non- infectious diseases such as diabetes, high blood pressure, ulcers, constipation , skin problems and cancer. One cup of sliced jackfruit has 157 calories. As well as the antioxidants it has can prevent the damaging of cells inside the body. 

Important: This curry can be used as meat substitute.

Ingredients

1.Roasted curry powder  ( need to prepare by different types of  spices)

- 2 tbsp. Coriander

- 1 tbsp. Cumin                  


-1/2 tbsp. Fenugreek

                                                             Pandan leaves and powder

- 4 Sona fennel seeds

- 4 True cardamom

- 2 inch Cinnamon

- 4 Cloves

- 10 - 15 Curry leaves

- 1/2 Black pepper

- 1 1/2 tsp Rice

2. Red chili powder

3. 5 tbsp. Coconut oil 

4. 1/2 tsp. Mustard seeds 

5. 1/2 tsp. cumin seeds

6. 1/2 tsp. Fenugreek seeds

7. 6 chopped Garlic cloves 

8. 10 - 15 Curry leaves                                                                Cloves   

9. 2 pieces (about 3 inches length) Pandan leaves                         

10.  3 pieces Garcinia 

11. 1 tsp. turmeric powder                                                     Cardamom

12. 1 tsp. salt

13. 500g cut young Jackfruit pieces                                   
                                                                          

14. 700ml Coconut milk                                           

15. Capsicum hot pepper( optional)

Instructions

1. First of all you have to peel the young Jackfruit with its sticky sap. During you peel off the jackfruit make sure use cooking oil for you hands and rub them. First start up divide it into two parts and cut into 4 pieces and remove its peel.

2. Then cut them into small pieces like marshmallows and keep aside.

3. Take a saucepan and add all contents that requires for roasted curry powder.

Steps for prepare roasted curry powder

add all contents (coriander, cumin, fenugreek , sona fennel seed, curry leaves, true cardamom, cinnamon, cloves, rice and black peppers) and dry roast them under low flame until its aromatic and color changes. ( 10 - 15 min adequate)

then roasted content grind well to make it as powder

now it is dry roasted curry powder and keep aside

4. Dry roast chili powder under low flame( between 5 to 10 minutes) and keep aside

5.Take the pan and add cooking oil and turn on the flame and keep it medium flame. When it starts oil get boil add Mustard seeds, cumin seeds ,Fenugreek seeds, chopped Garlic cloves, Curry leaves, Pandan leaves,  Garcinia, turmeric powder, salt and mix them until get gold color. ( minimum 5 - 6 minutes) Then add roasted curry powder and chili powder. Mix well and off the flame. (spices mixture)

6. Then add the young jackfruit pieces into pan and mix with spices mixture.

7. On the flame and add it coconut milk and mix well and keep close it until cook well. If salt is not enough you can add when its near to cooked. ( keep it 20 minutes until cook well)

8. Taste it with bread, rice, string hoppers etc.

Substitutions

If you cannot find Garcinia you can use Tamarind because Garcinia add for get the sour taste. 

If you don't want to prepare your own Jackfruit curry you can find canned young jackfruits that are seasoned with BBQ or teriyaki sauce from supermarkets.


You can prepare this recipe in a clay pots that inspires its taste and smell and also if you can treat it in a banana leaf you can also add this recipe to attraction. Now chill with this food😋
