Sri Lankan Pancake recipe

 Ingredients:

Flour mixture                                          




  • Turmeric powder 1 teaspoon                                   


             







  • Wheat flour 200g
  • Water 170ml / coconut milk 170ml
  • One egg or 1 tablespoon oil
  • Salt 1/2 teaspoon

Caramelized coconut   mixture or polpani mixture

  • Grated coconut 
  • 4 Cardamom
  • Red Sugar/ White sugar 100g
  • Hot water 2 table spoons

Instructions:

1. Take a pan and put under low flame for about 2 minutes and add 100g of sugar. Make sure to keep the pan under low flame. Then you will see the sugar is starting melting. Once it starts melting rotate the pan clock wise and again rotate it counter clock wise. Do this about 5 minutes until sugar gets melts and mix it with wooden spoon.

2. Add 2 tablespoons of hot water to the melted sugar and mix it from wooden spoon immediately before the melted sugar get burn.

3. After all the sugar melted add 4 chopped cardamom to the melted sugar and mix it. You can give unique fragrance for caramelized sugar mixture by adding cardamom seeds.

4. Then add grated coconut to the melted sugar mixture and mix them until the grated coconut combines with melted sugar. Make sure to mix it immediately. Now your caramelized coconut mixture is ready.

Keep aside by switching it to another bowl.

5. Then take 200g of wheat flour and add to a new bowl. 

6. Then add one egg and mix well. If you are vegetarian you can add melted butter or vegetable oil instead of egg. 

7. Add 1/4 of turmeric powder and 1/2 teaspoon of salt.

8. Add coconut milk and mix well. If you don't have add water and mix well. Make sure to mix by adding little by little coconut milk or water so that will make you easy to make the batter.

9. Then you need to remove the particles in the bottom of batter by filtering it through a sieve. Then again the remaining particles in the sieve mix with small amount of water and mix well and add to the batter. Make sure to prepare a thick batter.


                                   You  must use spoon like this to make thin pan cakes.

10. Now we can make the pan cakes.

11. First keep the pan for heat. The pan must be shallow. Add one spoon of batter to the pan and rotate it for make it as thin pancake. When the bottom side is cooked by using spatula turn it over.

Make sure to not to break the pan cake when you turn it. After you turn it keep the pan cake few seconds on pan and move to a horizontal plate.

12. You can make 12 pancakes from this batter.

13. Then take your pancake on to the horizontal plate and add some caramelized coconut for middle of the pancake and roll it as the following figures.
