Ricotta Cheesecake




Ingredients

Ingredients for Cheesecake Crust:     




  • 12 gram crackers
  • 6 tablespoons of unsalted butter   
  • Granulated sugar 1 tablespoon

Ingredients for Cheesecake:                          


  • 6 Eggs
  • 1/4 cup Sour cream 
  • 1/2 table spoon Vanilla essence
  • 1 1/4 cup Granulated Sugar
  • 2 1/4 pounds of cream cheese 

Ingredients for Cherry Sauce:            


  • Fresh or frozen sweet cherries 4 cups 
  • Water 1/4 to 1/3 cup
  • Corn Starch 1 table spoon
  • Lemon Juice 1 table spoon
  • Sugar 2 tablespoons

Instructions

1.Take 12 gram crackers and pulse or grind them inside high powered blender until the biscuits become crumbs.

2. Put the oven at 350 Fahrenheit of temperature.

3.Take out crumbs from the blender jar transfer them to a bowl and mix with 6 tablespoons of unsalted butter and 1 table spoon of sugar. This is known as cheesecake crust. 

4. Transfer this prepared cheesecake crust into nonstick springform pan which is helpful for release the cheesecake with crust. Once the crust added to the pan spread over the bottom area of  the pan and bake the crust at preheated oven (350 Fahrenheit) for 8 - 9 minutes.

5. After 8 minutes bake of cheesecake crust take it out and keep until it cools. Keep aside.


6. Now take 1 Liter of  water and keep for boiling in the kettle.( for bake the cake via water bath method)

7. During this time keep the temperature in the oven for 450 Fahrenheit. 

8. Take deep bowl and add 2 1/4 cup of cream cheese, 1 1/4 cup of granulated sugar and mix them by using hand mixer or stand mixer for 5 minutes.

9. After 5 minutes add 6 eggs which are at room temperature and mix via hand mixer. Once eggs are well mixed scrape down the bowl once more. Then add 1/4 cup of sour cream with 1/2 tablespoon of vanilla extract and mix by hand mixer under low speed until a smooth mixture comes. This is called batter after smoothie batter forms keep it aside.

10. Then take a two large foil that can wrap around the springform pan and wrap the pan.( This foil is not cause for any water leaks when u add the pan to the water bath of hot water.)

11. Covered springform pan put inside the shallow tray and add the batter to the springform pan. during this time add some hot water to the tray  and the water level must be half height from your springform pan.

12. Then transfer the shallow tray with springform pan into the pre heated oven and bake at 450 Fahrenheit for 15 minutes . After 15 minutes change the temperature into 225 Fahrenheit for  1hour and 10 minutes avoiding open the door of oven.

13.Then take out the cheesecake from oven and shallow tray carefully and remove the foil . Then keep the cake aside until it comes room temperature.

14. Once the cake comes room temperature seal the cake from polyethene wrap and keep it inside the refrigerator one night. You can try the cheesecake in the morning.

15.  After one night your cheesecake is ready.

16.If you are decorating the cake spread the cherry sauce top layer of the cheesecake. Bon appetite.😇



Cherry sauce is for prepare an attractive and delicious cheesecake.

Instructions for cherry sauce

1.Take 4 cups of fresh cherries and remove the seeds of them.

2.Transfer the pitted cherries into deep pan and add 2 tablespoons of sugar with 1/4 cup of sugar and mix well.

3.Turn  on the flame and cook the cherries under medium flame and mix them gently about 5 minutes.

4.Then add  1 tablespoon of lemon juice with 1 tablespoon of corn starch and stir gently.

5.Once mixture become more foamy keep it under the low flame for 7 -8 minutes.

6.When the cherries are cooked they become soft.

7.After 8 minutes off the flame let it cool. Cooled cherry sauce add into glass bottle and then you can store inside the refrigerator.
