Sri Lankan sea food mixed rice recipe

 Ingredients

  • Prawns 200g
  • Cuttle fish 200g
  • Para fish 200g
  • 350g of cooked white samba rice or Basmathi rice or Thai Jasmine rice
  • 2 Capsicums
  • 10'' celery and celery leaves
  • Mushrooms 100g
  • 1 large size finely chopped onion       
  • 2 tsp Chillie powder
  • Garlic paste 1tbsp.
  • Ginger paste 1tbsp.
  • 1 1/2 tbsp. Soya sauce
  • Cooking oil 2 tbsp.
  • 1 - 2  Tomatoes
  • 2 tsp Sugar
  • 1/2 cup Fish stock
  • Salt 
  • Pepper
  • Butter 1 tsp.
  • Pandan leaves

Instructions

How cook the rice

When you cooking the rice if you can add some salt and oil into the rice. That will make your rice stop from become soo sticky. 

If you use some pandan leaves for rice this will give your rice perfect and fresh smell. 

If you don't have pandan leaves just butter or cooking oil and salt is enough.

How to prepare the cuttle fish, para fish and prawns.

1. First need to cut and clean the prawns, squid and cuttle fish.

You must remove the outside skeleton of the prawns with its head part.

You must remove the black colour part inside the cuttle fish and cut it as rings.

You must cut the para fish as cubes.

2. Then finely cut and cleaned squid rings and prawns need to boil inside the deep pan with 300ml of water and add it 1tsp. of salt and 2 tsp. of pepper. Boil this prawns and cuttle fish approximately 10 minutes. Keep aside after they boiled.

Important: You must separate sea food stock with the prawns and cuttle fish boiled water into another bowl.

3. In addition, you must boil  the para fish with adding 1 tsp salt and 2 tsp. pepper to it.

Beginning of preparing the rice

4. Now take a large size pan ,turn on the flame and under low flame add butter, cooking oil. When oil get starts to boil add ginger paste, garlic paste and mix well.

5. When garlic paste and ginger paste get into light brown colour, add finely chopped onion, pandan leaves and finely chopped celery  and mix them under low flame. 

During this time add the boiled cuttle fish rings, prawns and para fish cubes and mix them as well.

Then add finely cut capsicum, tomatoes and finely cut mushrooms and mix well.

Then add pinch of salt and 2 tsp. of chillie powder. Mix well.

Then add sea food stock, 1 1/2 tbsp. Soya sauce and 2 tsp of sugar. mix well.

6.Now add cooked rice spoon by spoon because you need to mix the rice perfectly with the sea food mixture. ( do it as add 2 spoons of cooked rice and mix with the sea food mixture and again add two spoons and mix with sea food mixture)

You must mix all these ingredients under low flame.

7. Ultimately you can add 1 tbsp of sea stock if you saved because sea food stock can make your sea food rice moist and taste. 

8. Now off the flame and add the celery leaves and mix with rice.

Now your rice is ready.
